Tzatziki
This simple cucumber and yogurt based dip is extremely versatile. Use it in sandwiches such as Greek Chicken Pita or drizzle it over chicken just before serving. It also makes a great dip for chips or vegies and we've been known to eat it as an alternative to sweet desserts.
Cooking for One or Two
1/3 cup plain yogurt
1/4 English cucumber

Cooking for Three or Four
2/3 cup plain yogurt
1/2 English cucumber
|
Peel and remove seeds from cucumber. Chop or coarsely grate cucumber. Mix yogurt and cucumber together in a small serving bowl.
Cover and refrigerate any leftovers. Tzatziki will keep for 2-3 days.
