Prosciutto & Goat Cheese Crostini

Lunch for One or Two
2 slices French or Italian bread
½ teaspoon olive oil
½ clove garlic
2-4 slices prosciutto
1 oz. soft goat cheese
pinch fresh basil

Although not for the faint of palates, this recipe is a great way to introduce new tastes to your child. Brush the bread slices with olive oil and garlic. Layer the prosciutto, then sprinkle with goat cheese and basil. Toast in oven or toaster oven for 5 minutes.
