In our house we make these quick pizzas as an after work snack, usually with pineapple and sliced ham for a Hawaiian flavor.
For a take-along lunch, before you pack the lunch box, pop the pizzas in the oven just long enough to melt the cheese. This will keep the toppings in place until lunch. If you and your kids like cold pizza, no heating required, but 30 seconds in a microwave is usually enough to get the cheese nice and gooey.
Whole Wheat English Muffin Pizza

Cooking for One or Two
1 whole wheat English muffin, sliced
2 tablespoons pizza sauce
or 1 plum tomato, sliced
toppings of your choice
2 oz. mozzarella cheese

Cooking for Three or Four
3 whole wheat English muffin, sliced
6 tablespoons pizza sauce
or 3 plum tomatos, sliced
toppings of your choice
6 oz. mozzarella cheese

As easy as it sounds! Assemble mini pizzas by piling sauce, toppings and cheese on top of the English muffin slices. Feel free to get creative with healthy toppings---even try new things like artichoke hearts, goat cheese, or roasted red peppers. Then, bake mini pizzas for 5-10 minutes at 350 degrees, until cheese melts and begins turning golden brown.
For an innovative and low-sodium option, replace pizza sauce with sliced, fresh plum tomatoes. You may want to marinate the tomatoes in a little salt, pepper, garlic and basil, depending on taste.
Makes two mini pizzas per one English Muffin.

Single Cook Tip
Buy Mozzarella cheese sticks instead of a big mozzarella ball. Because the sticks are individually packaged, portion control is easier and the cheese keeps longer because you open only what you need.
