Make this yummy wrap any day you want to add some zing to lunch. Chop the vegies, ham and cheese the night before to speed up assembly in the morning before you leave the house. Serve the wrap with lime flavored corn chips, jicama and fresh apple or pear slices. Add a well-chilled juice box or ice pack to keep the wrap cool if there's no refrigerator around, and lunch is served!


Southwestern Tortilla Wrap

Lunch for One

1 teaspoon olive oil
1 tablespoon sliced onions
1 tablespoon sliced green bell peppers
salt and pepper to taste
1 flour tortilla
1 teaspoon sour cream
1 teaspoon salsa (mild to hot will do, according to personal tastes)
2-3 slices of ham, chopped
2 oz. shredded cheddar cheese

Heat olive oil in small skillet and sauté onions and peppers with salt and pepper to taste. When onions are glassy, set pan aside and let cool.

Heat both sides of the tortilla in the oven or on the range. Spread sour cream and salsa on tortilla, then stuff with ham, cheese, onions and peppers. Roll into a wrap and cut in half.
